The Big M is a thermostat controlled smoker. You set your desired temperature on the dial and the solenoid opens and closes at the firebox to control the airflow. If the smoker gets hotter than your desired temperature, the solenoid shuts and slows down airflow into the firebox automatically. When the smoker temperature drops, the solenoid opens up allowing airflow back into the firebox thus raising the temperature.
In the early 1990's, my Grandfather (Homer "Mack" Magee) designed and built this smoker for my Aunt Judy of Shelby's Real Texas BBQ. The first of these cookers were being used 20 years ago and still being used today. With the original plans and wanting to continue my Grandfather's legacy, we built the Big M to its original plans with some updated modifications to give it the M Grills twist. The craftsmanship, build quality and performance are some of the best you have ever seen from any smoker manufacturer in the world.

3/8" steel firebox with refractory insulated walls and insulated door.
8" diameter firebox intake for optimal airflow. Twice as large as comparable smokers on the market. When burning wood, airflow is everything for great tasting barbecue. We designed our large capacity smoker for unparalleled thermostat controlled wood burning smoking. We have also implemented air ports on our damper system so when the solenoid closes off the intake airflow, there is a small amount of airflow to keep your wood combusting.
Large 8" x 16" internal air collector located inside the bottom right of the smoker that runs up through the smoker and transitions into an 8" x 8" stack. We can also transition to a 8" diameter stack.
The Big M has a standard 9' configuration as shown. Since these are built to order, we can use a variety of options such as slam latches for the doors, optional paint colors, additional cooking racks, etc...
Just like all of our M Grills products, the Big M is fabricated with extremely high precision. Our sheet metal parts are all water jet and laser cut with cnc sheet metal bending and fabricated at the highest level. We do not cut corners and every one of our cookers are built with consistency and perfection.
Our recommendation on how to smoke on the Big M.
The key to great tasting bbq is clean burning wood. So we recommend to keep a small hot burning fire with the damper running wide open until you are ready to wrap your meat. Once your meat is wrapped and put back on the smoker, you can then load the Big M up with more wood and set the thermostat to do the work. No more babysitting because the Big M's thermostat will control the airflow and temperature for hours. This saves you precious time and fuel with not having to refuel your smoker every 30min to 1 hour to keep it going.
Typically when the solenoid shuts off the intake airflow, burning wood can smolder. As the solenoid opens, air is rushed into the fire box to allow wood to combust cleanly again. The Big M features air intake dampers over the firebox to push stale smoke out of the cooking chamber without effecting the firebox airflow. These air intake dampers push out any slow moving smoke when the firebox intake damper is closed.
You do not have to run the thermostat on the Big M. You can simply keep the damper fully open at all times and feed the Big M with logs of wood to maintain temperature like a traditional stick burner. You can even run the Big M with a large basket of lump charcoal. This smoker is very versatile and can handle many styles of cooking.

Body is fabricated from two layers of 12 gauge steel with 2" of high density thermal insulation. We do not rivet outer skins on our smokers. The inner and outer layers are solid welded and hand finished for a high quality, seamless aesthetic.
