This 12 gauge Direct Sear Option allows you to easily switch between indirect heat and direct heat. You will create a ring of fire that directly contacts your cooking surface - creating a very hot surface for searing. We include custom-cut Aluminum GrillGrates to fit perfectly on our grills. Aluminum GrillGrates conduct heat very well and can achieve surface temperatures greater than 600F with this setup. GrillGrates are very important to this kit because grease burns up in the channels rather than dripping into your heat source. GrillGrates are reversible! Grates on one side and flat top on the other.
