Why do we think it's revolutionary? Simple. You are taking the best performing charcoal grill on the market, a multi World Champion caliber cooking machine and transforming it into a true indirect smoker! It's smaller than a drum smoker, breaks down very easily for transportation, features a large easy access door to add wood chunks during long cooks, and most importantly... this is a reverse airflow smoker!
There is a solid baffle bolted in place with an opening only on the right side. So there is NO DROP IN DIFFUSER PLATE! With drop in diffuser plates, you have heat that travels all around the plate which allows more hot spots. If your food is not centered directly over the diffuser plate, anything hanging over will be exposed to direct heat. With our setup, the only direct heat is coming from a 2" opening on the right side of the baffle. So you can place food all the way to the edge allowing you more smoking real estate on a smaller surface area.
The firebox door and bottom of the Smoking Attachment is all gasket sealed!
There is plenty of room to place a FULL SIZE RESTAURANT PAN directly on top of the baffle which you can fill with water. We recommend using this pan as a drip catch. The M16 cooking grates sit over this pan allowing enough room to smoke a full packer brisket!

Construction:
The M16 Smoker Accessory features a 16 gauge mild steel body with stainless steel fasteners and hinge. The body is painted with CERAKOTE Cobalt Grey. CERAKOTE is the industry leader in ceramic coatings. This coating is rated at 1200 degrees and is extremely durable in all environments. Do not get this confused with standard high temperature paints that fade well before their high temperature rating as well as UV lighting. CERAKOTE is used in extreme conditions from firearms, automotive wheels, engine parts, and gym equipment.
