BIG M Wood Burning Smokers are thermostat controlled, all wood burning or charcoal smoking works of art! Designed and built specifically for barbecue restaurants and catering.
History:
In the late 1980's, my Grandfather (Homer "Mack" Magee) designed and built these smokers for my Aunt Judy of 'Shelby's Real Texas BBQ' and for a local barbecue restaurant. The first of these cookers were being used over 20 years ago and still being used today. With the original plans and wanting to continue my Grandfather's legacy, we built the Big M to its original plans with some updated modifications to give it the M Grills twist. The craftsmanship, build quality and performance are some of the best you have ever seen from any smoker manufacturer in the world.

Features:
Thermostat controlled wood burning with optional charcoal baskets.
Bodies are fabricated with 12 gauge mild steel interiors with 2" of thick high density thermal insulation and 12 gauge mild steel fully welded exterior. The entire body is hand finished for a beautiful appearance. We do not rivet thin exterior panels on our cookers. We offer full stainless steel interiors options!
3/16" thick insulated main cooking doors.
Each door has 4 - 26" X 31" cooking grates. 806 sq.in. per grate. Additional grates are optional for shorter profile foods such as ribs.
3/8" thick steel insulated internal fireboxes with optional charcoal baskets. Firebox doors are 3/8" thick steel and insulated.
8" diameter firebox intake for optimal airflow. Twice as large as comparable smokers on the market. When burning wood, airflow is everything. We designed our large capacity smoker for unparalleled thermostat controlled wood burning smoking. We have also implemented air ports on our damper system so when the solenoid closes off the intake airflow, there is a small amount of airflow to keep your wood combusting. We built our Big M Smokers to perform like large offset smokers, but FAR more efficient.
Large 8" x 16" internal air collector located inside the bottom right of the smoker that runs up through the smoker and transitions into an 8" x 8" stainless steel stack. We do offer an 8" diameter round stack.

The Big M is built to order, we can use a variety of options such as custom branding, optional paint colors, additional cooking racks, etc...If you dream it, we can build it.
Just like all of our M Grills products, the Big M is fabricated with extremely high precision. Our sheet metal parts are all water jet and laser cut with cnc sheet metal bending and fabricated at the highest level. We do not cut corners and every one of our cookers are built with consistency and perfection.
Efficiency:
Insulated Big M Smokers can run up to 12+ hours with an established hot bed of coals and up to 16" splits of wood.
The insulated Big M's require little wood to maintain temperature. Instead of throwing a few sticks of wood every 30 minutes on a large offset smoker to keep consistent temperature, the same amount of wood will run a Big M Smoker for hours completely unattended. This will save you precious time and money in the long run without sacrificing the quality of your barbecue! We believe the Big M Smoker will pay for itself.
Reliability:
We prefer stationary racks over rotisserie systems. Here's why...
It comes down to reliability. Moving parts can fail over time and the more you have, the more risks of failing during a cook. Even loading a rotisserie can be risky. That's why we prefer stationary racks over rotisserie systems. On a Big M, if the thermostat or solenoid goes out during a cook you can still operate the smoker as a traditional offset while easily replacing the external part if needed.
Custom Options:
There are many custom options available such as stainless steel racks, folding stacks with rests, large industrial steel casters, charcoal baskets, various colors options, and custom branding.

We can add up to 7 racks per door.
This can increase your capacity to 150lbs of meat per door!
You can choose to from 4 racks to 5 racks, 6 racks or 7 racks. We recommend 7 racks to load your smoker with low profile foods such as ribs. 7 racks will give you 3" of clearance between racks. 6 racks will give you 5" of clearance between each rack. So the more racks you add will give you less clearance, but each rack is completely removable if you need more space for some cooks and less for others.
